If there is no microwave at your office lunch can be a depressing parade of sandwich after sandwich. This is a great change, and requires no heating. 1 can (14 oz/ 400ml) Chick Peas 1 cup kernel corn (canned or frozen) 1 cup cubed cooked chicken 3/4 cup diced red bell pepper 2 green onions chopped 1/4 cup red wine vinegar 2 tbsp vegetable oil 1/2 tsp minced garlic 1/4 tsp salt 1/4 tsp black pepper 1/4-1/2 hot pepper sauce
In a medium bowl combine all, toss gently, chill until serving. Nice to marinade overnite
