Easy mexican pasta burger

Ingredients:
1 lb. ground beef
1 pkg. Mac & Cheese (PC white cheddar is very good)
2 cups water
1.5 cup Salsa
1.5 cup frozen corn

Method:
Brown meat in large frypan on medium-high heat. Drain.
Add Macaroni, water salsa, and corn. Bring to boil. Reduce heat to medium; cover. Simmer 8 min, stirring twice.
Stir in Cheese Sauce Mix; cook until heated through. Serve immediately.

Chicken and Bean Salad

If there is no microwave at your office lunch can be a depressing parade of sandwich after sandwich. This is a great change, and requires no heating.

1 can (14 oz/ 400ml) Chick Peas
1 cup kernel corn (canned or frozen)
1 cup cubed cooked chicken
3/4 cup diced red bell pepper
2 green onions chopped
1/4 cup red wine vinegar
2 tbsp vegetable oil
1/2 tsp minced garlic
1/4 tsp salt
1/4 tsp black pepper
1/4-1/2 hot pepper sauce

In a medium bowl combine all, toss gently, chill until serving. Nice to marinade overnite
